My Under 100 Calorie Beef Burger Clean Eating Recipe

Who likes a hamburger?! Come on!  Even if you don't eat them, you've got to admit they're quite tasty!  Well, how about this idea then...a under 100 calorie carb-free clean eating beef burger!!  Impossible, no?  Think again...

Open your mind to the possibilities out there and check this out...how about replacing the hamburger bread with a portobello mushroom??  This fantastic idea for meat-eaters is basically a stuffed mushroom recipe, but with the mushroom on the top and the bottom. - 
Just add some light pesto, fresh spinach, sliced tomato and cucumber, plus those lovely lean slices of beef from the supermarket, and voila! It tastes nicer than a McDonald's hamburger!!

You often hear health gurus saying that you need 'colour' in your diet as these represent a variety of different nutrients and vitamins we need.  So where does this leave boring-coloured mushrooms?  Mushrooms buck the trend thanks to their high content of B vitamins, including thiamine, folate, riboflavin, pantothenic acid and niacin.  They also hold beta-glucans; a type of fibre which play an important role in improving insulin resistance and cholesterol levels, decreasing the risk of obesity and improving general well-being.  



Mushrooms also contain choline; a fabulous nutrient that aids muscle movement, our learning ability, our memory and also sleep patterns!!

And of course, a slice of lean beef (44 kcals) is not only delicious, but it also is a good source of protein, iron and zinc. Beef is a nutrient-dense sort of meat, containing minerals that are crucial to the maintenance and development of key functions in our bodies, including our defence system and the absorption of amino acids.

So for these reasons, check out this cheeky recipe I have invented to resemble under 100 kcal beef burgers:-
Ingredients:-
2 portobello mushrooms, 1 slice of topside beef, cucumber, tomato, spinach leaves, light pesto sauce plus bamboo stick. 

Method
Pull out the mushroom stalks, and lay the mushrooms on their 'backs'.  Place a few pieces of spinach on top of one mushroom, add a slice of tomato and add some slices of cucumber on.  Place on top of this the slice of beef, and spread some light pesto on top of the piece of beef, then place the other mushroom on top.  Put a bamboo skewer through the 'beef burger' to keep it in place, and bake in the oven on a baking tray for 15-20 minutes at 350 degrees Fahrenheit (175 degrees centigrade).
